I think you got it there Art. I dont think that most of the bagel bakers here in Florida (I am in Spring Hill, Hernando County), boil the bagel in water before baking. That seems to be the key step that they are missing.

As far as the water itself goes, I have spoken to pizza bakers who tell me it has nothing to do with the water. It's the quality of the ingredients used to begin with and the important part is the kneading of the dough and properly pressing it out as the pizza is being made.

We have a guy here in Spring Hill now, Mario, from Bensonhurst. I could not tell the difference between a made in Brooklyn slice and a Mario's slice.
On the other hand, there are other pizza places here that don't quite make the grade, but are OK.
